Earlier this year, I discovered Super Natural Cooking by Heidi Swanson. I had bought a copy for my cousin, and after looking through it decided I needed my own. The book is full of recipes that are healthy yet still tasty and use interesting grains and combinations of ingredients. Some of the recipes have become staples around here.
So imagine my surprise a couple of weeks ago when I discovered that 101 Cookbooks is also written by Heidi Swanson. I knew of it before, but I just hadn't realized who was behind it. Since then, it's been my go to site for recipes. I needed a gluten-free item to bring to a party on Sunday, and I came across the Edamame Salad with Meyer Lemon and Shiso Vinaigrette recipe. It sounded good, and it was simple to make (thanks Japanese grocery store down the street!). It turned out to be a giant hit, and everyone at the party wanted the recipe. I even ended up making another batch for us to bring in our lunches. It was that good! Tomorrow night I'm trying Mushroom Casserole. I'm possibly a little bit too excited about it.
So thank you to Heidi for making all these delicious and healthy recipes available. And if you haven't explored 101 cookbooks or tried any of her recipes, I urge you to. You won't be disappointed!
