On Saturday morning, I woke up to the smell of blueberry muffins. I don't know where it was coming from (definitely NOT my apartment), and I don't know for sure that it was those specific muffins, but it didn't matter. I now needed blueberry muffins and it made me a little sad because exactly one week before, I had decided to go gluten-free for 30 days.
It wasn't a totally tragedy, of course. It just meant that I couldn't run down to the store and buy a blueberry muffin to satiate my craving right away. If I wanted blueberry muffins, I would have to make them myself. So I turned to Gluten-Free Girl, and sure enough, there was a Blueberry Muffin recipe.
I tried it out this morning and the muffins didn't turn out quite how I had hoped, at least not in appearance (totally my own fault - I think I was a little heavy-handed creaming the butter and sugar together which the recipe had warned me about). However, they taste fantastic! If someone hadn't told me they were gluten-free, I don't think I would ever have known. There's a bunch left over, so hopefully they'll still be just as good tomorrow (and the next day, and the day after that...)
So, you might be wondering about the gluten-free thing. I'm not going to go into all the details, but I'm trying this to see if it will clear up a couple of health-related things. Mainly my eczema, but maybe a couple of other things too. I suspect that if I do have a gluten intolerance, it's pretty mild. I'm already seeing an improvement in a patch of eczema that just would not go away. I'm hoping it's related to the change in my diet and not just a coincidence, but we'll see. Twenty-three more days to go!
